    GRAMMA NANCY'S STRAWBERRY TARRAGON JAM

  • 4 cups granulated sugar
  • 5 cups crushed strawberries
  • 1/2 cup finely chopped tarragon leaves

    Combine sugar & strawberries in saucepan. Bring to a boil. Add the tarragon leaves. Let simmer and stir often until thick. Skim off foam. Makes 3 (One pint) jars.

  • Plant stawberries as soon as it's warm enough that the soil can be worked. Pinch the flowers off strawberries until July.

  • If you've already got established strawberry plants from previous years... Clear away mulch and add compost as soon you see new growth.

  • Enjoy chemical free food for years to come by canning it.

  • Recycle mayonnaise and mustard jars for canning. Rinse them with vinegar to clean and deoderize.

  • Use vinegar for removing fruit stains from your hands later.

Strawberries are best used within 2-3 days

    No Cook Strawberry Kiwi Jam

  • Place 2 1/2 cups of crushed strawberries in a bowl. Add 1 peeled / chopped kiwi.

  • In a separate bowl mix a package of certo light crystals with 1/4 cup sugar. Gradually add to fruit and mix well.

  • Leave it set for 1/2 hour.

  • Add 3 more cups of sugar and stir until most of the sugar is dissolved. Pour into jars, cover tightly and let sit for up to 24 hrs until set.

  • Can be stored in freezer or in refrigerator for up to one month.

    Labeling Quick Freezer Meals

  • I have my changed my system for labeling homemade freezer meals. I used to carefully note in large clear letters, "VEGETABLE PIE" or "BEEF VEGETABLE SOUP".

  • However, I used to get frustrated when I asked my husband what he wanted for dinner because he never asked for any of those things. So, I decided to stock the freezer with what he really likes.

  • If you look in my freezer now you'll see a whole new set of labels. You'll find dinners with neat, legible tags that say: "Whatever," "Anything," "I Don't Know," "I Don't Care," "Something Good," or "Food."

  • My frustration is now reduced because no matter what my husband replies when I ask him what he wants for dinner, I know that it is there waiting:)
